Belgian Baby Hatchetwaffles

A recipe for super fluffy waffles:

  • 1 1/2 cups BELGIAN WAFFLE MIX (a combo of flour, sugar, oil and salt)
  • 1 EGG
  • 3 tbsp OIL
  • 1 1/4 cups MILK

Lightly spray waffle iron with cooking spray.  Preheat waffle iron.  Separate egg white from egg yolk.  Beat egg white until stiff peaks form.  Blend waffle mix, egg yolk, oil and milk together until smooth.  Don’t worry if it looks sort of runny.   Fold egg white into mix.  Pour 2/3 cup of batter or so onto preheated and slightly greased waffle iron.  Close waffle iron and cook for about 3 minutes.  Open waffle iron and see how your waffle is doing.  Adjust cook time as necessary

Enjoy with butter, maple syrup, fresh fruit, fruit compote, yogurt, powdered sugar or ice cream.

Yields 3 or so waffles.
